Menu Plan July 16 – Tomatoes

[2]The theme for the Gluten-Free Menu Swap this week is Tomatoes. I don’t eat a lot of tomatoes myself, but I know a lot of you are growing fresh tomatoes in your gardens this summer. We would love to know what you are doing to add them to your meals.
I don’t usually make many meals or dishes where the tomato is the main ingredient. Instead, I often add it to meals for extra flavor, juicy texture, and/or that bright red color! And, the vitamin C and antioxidants it adds to a meal are a nutritional bonus.
Here are a few dishes with tomatoes that didn’t make it into our meals this week:

Monday - Make-your-own pizzas with Udi’s pizza crust [6], Spinach Salad
Tuesday - Shredded Chicken [7] Tacos with sliced black olives, shredded cheese, and Avocado Salsa [8]
Wednesday - Grilled Pork Chops, Sweet Potato Fries, Sautéed Asparagus [9]
Thursday - Southwestern Chicken Salad [10] using salad greens from Monday, chicken from Tuesday, and fresh tomatoes from my parents’ garden
Friday - Cilantro Lime Shrimp [11] served over rice with Kalyn’s Vegan Tomato Salad (with Cucumber and Avocado) [12]
Saturday - leftovers
Sunday - Grilled Steaks, Corn on the Cob, Wild Rice Salad [13] (with Cherry Tomatoes from the garden)
Gluten Free Menu Swap Roundup
Brandy at Gluten-Free for Me! [14] is not a fan of tomatoes, but she says she often adds them to meals for her husband and daughters who love them. And this week is no exception, as she will be cooking or serving tomatoes in their salad, Chicken Marinara, Hamburgers, and Cream Cheese Chicken Chili. Brandy says they also like fresh tomato slices with breakfast and lunch, and sometimes even make tomato sandwiches. Also on her menu this week [14] is Crock-Pot Greek Chicken, Spaghetti with Fresh Herbs & Parmesan, and Honey Lime Tilapia.
Angela at Angela’s Kitchen [15] says the tomatoes in her garden aren’t ready for picking, yet. But thanks to the tomatoes at her local farmers’ market, she does have BLT sandwiches and a Tomato Basil Salad on the menu this week. She’s’ also planning on making Roasted Chicken, Slow-Cooker Korean Tacos [16], Cilantro Cashew Salad [17], California Turkey Burgers [18], and more! [15]
Paige at Not Missing a Thing! [19] has tomatoes in the Oven-Baked Chicken Cacciatore [20] and Pasta Salad [21] on her menu plan this week. She’s also making a Chicken version of Shrimp Scampi [22], as well as grilling Chicken Drumsticks, Steaks, and Hamburgers. Sounds like a great summer-time menu [19] to me.
