We had a nice Fourth of July weekend at home, but we spent a lot of time working on house projects. We still have more to do on our bathroom renovation this week. We’ll also be preparing for travel later this month, so I’m planning for a week of easy cooking.
Monday – Grilled Steaks
Grilling steaks and serving with sweet potatoes and broccoli.
Tuesday – Baked Chicken
Simple meal of chicken breasts baked with a creamy chicken sauce, and served with Red Potato and Green Bean Salad.
Wednesday – Cheese-Steak Sandwiches
Using leftover steak from Monday, slicing it thin and re-heating with onions and provolone cheese. We’ll put it all on Against the Grain gluten-free rolls and serve with leftover Red Potato and Green Bean Salad from Tuesday.
Thursday – Chick-fil-A
Taking a break from cooking and going to Chick-fil-A for dinner. The kids like to eat the chargrilled chicken filet (no bun, just the filet), fruit cup, and waffle fries. I usually eat one of their gluten-free salads: Chargrilled Chicken Garden Salad or Chargrilled Chicken and Fruit Salad. If you haven’t tried Chick-fil-A yet, check out their gluten-free menu.
Friday – Loaded Baked Potatoes
Using leftover baked chicken from Tuesday and adding broccoli and shredded cheese to top baked potatoes. Makes for a filling, but quick and easy dinner.
Saturday – Pork Chops with Black Beans
Pork chops pan-fried with black beans and salsa, topped with cilantro, and served with rice and a tossed salad.
Sunday – Leftovers?
If I’ve planned it right, all the leftovers will be gone by Sunday, and we’ll have to go out for dinner. 🙂 I’m thinking Outback Steakhouse sounds good.
