Shirley, I just found your message in spam. Thanks for the ideas for the kids. I've tried battered fish in the past, but it had mixed reviews from the kids. It's been a while since I've tried though, so I think I should give it a try again. And, I'll see if I can find Choice Batter. Thanks!

Thanks for the links. I definitely try to prepare more fish and seafood dishes since they seem so healthy, and I just posted a recipe for tomato avocado salsa that is perfect for simple grilled or panfried fish:

I'm a fish lover and can eat it several days a week. Usually if we go on a tropical vacation, I eat fish daily and sometimes for lunch and dinner. You know I don't usually promote gluten-free specialty products, but you might try the Choice Batter for some fish fillets for the kids. Cutting the fish into bite-sized chunks like fish nuggest or fish and chips would help, too. I made catfish with Choice Batter a while back and hubby raved over the taste. I still prefer my cornmeal mix, but it's something to consider. It seems expensive for a small package, but you don't need to follow the package instructions of using a cup of mix with a cup of water. One half cup of each is plenty unless you are making a lot. (FYI: I'm still testing out this product with other applications and will post a review in the future.)

Have a good week! Support group meeting here tonight, so I better get busy ...

I don't know if I can do fish twice a week. I'll have to work on that. Maybe if I can get some more good recipes. Or, at least get my kids to eat it.

Michelle - Glad you liked the balsamic glaze. I wish I could get my kids to eat more fish. My son won't eat fish, but he will do shrimp.
Diane at The WHOLE Gang posted a recipe for a <a href="http://www.thewholegang.org/2010/02/spinach-and-artichoke-dip-pizza-recipe/" rel="nofollow">spinach artichoke pizza</a> recently. She, too, avoids dairy.

We tried broiling some salmon with your balsamic glaze this weekend and it was a HUGE hit! Thanks! My kids love fish. I would much prefer shrimp or some other seafood, but I can manage a mild fish once in a while. I'm trying to train my tastebuds so I can eat it more often. I'd give that parmesan sauce a shot too, but we're off dairy now, too. I've finally gotten the hand of the no gluten thing, but without cheese I'm really struggling.

Oh, and we like the BRM crust, so hope your family likes it as well! Now I just need do find some cheese-free pizza topping options. not a fan of bbq pizza :(
