Menu Plan March 12 – Eggs

Sorry for the delay today. I sat down more than once this past weekend to write this week’s menu plan and each time I didn’t get very far. Each time I wrote, it was a few sentences about something different. There are lots of distractions going on for me and my family right now. Some good, some bad, and some just part of being a wife, mother, daughter, daughter-in-law, aunt, home-owner, volunteer, neighbor, blogger, etc. I’m sure you all know what I’m talking about.

Rather than show you the jumbled mess that I tried to write on several different occasions, let me just say that the theme for this week’s Gluten-Free Menu Swap is Eggs. I chose Eggs as the theme because I guess I’m already thinking about Easter. And…well, it’s getting to be the season for eggs. Yup, chickens will lay eggs more frequently during the seasons with more sunlight. (Of course, eggs are available year-round at the grocery stores because the chickens are exposed to artificial light to keep them laying.)

Breakfast seems to be the common meal of the day for eggs, but don’t forget about other meals, too. Egg salad, sliced hard-boiled eggs added to salads, quiche, frittatas, etc. are all good options for lunch and dinner, too! We recently ate at Austin’s Grill, where I found their Migas Plate (on their gluten-free menu) to be just what I needed to give me a boost of protein and energy. Does your family eat eggs? Monday –  Chicken Tacos with corn tortillas and slow-cooked chicken served with Refried Beans

TuesdayGrilled Flank Steak served with twice baked potatoes and Rainbow Apple Salad

Wednesday – Teriyaki chicken served with Basmati Rice and steamed Broccoli

Thursday – Roasted Chicken served with quinoa and Glazed Carrots

Friday Eating Out

Saturday – Party Dogs (Hot Dogs wrapped in gluten-free pizza dough) served with sweet potato fries

Sunday – Leftover Buffet

Gluten Free Menu Swap Roundup

Paige at Not Missing a Thing! cooks gluten-free, dairy-free, and egg-free, so no egg dishes in her menu this week. But don’t let that stop you from checking out her menu this week. She’s trying my Quinoa Indian Chicken and Paula Deen’s Swiss Steak in the crockpot. She also has a dairy-free Cream of Potato Soup that looks great. Her family will be celebrating St. Pat’s Day with Corned Beef and Roast Potatoes on Friday and Turkey and Mashed Potatoes on Saturday.

Rachel at Rachel Cooks is trying some new gluten-free meals this week. She’s starting her week with Seafood Alfredo, trying Schwann’s Fire Grilled Italian Cod, and is going to try making homemade Chicken Noodle Soup. She also has Burgers, Tacos and Herbed Pork Roast on the menu. She has a Breakfast night planned, too, and says she might make eggs, but I bet her son will be able to convince her to make Pamela’s pancakes instead. 🙂

Wendy at Celiacs in the House was fortunate to have her daughter home from college last week cooking and baking up lots of yummy things. This week, however, Wendy is cooking some recipes from some new gluten-free cookbooks. Kale, Bacon, and Black Olive Egg Pie sounds deliciously healthy! She also has on the menu Homemade Chipotle Chicken Rice Bowls, Vegetable Soup with flatbread, and Salmon and Quinoa Cakes. And check out her photo of tempting Turkey Burgers on waffle buns.

My Big Apology. I thought I was distracted this week? Well, I must have been even crazier last week, because I completely missed two menu plans that were linked in last week’s comments. Egg-cellent theme for the week. Sorry, somebody had to say it.

It may be the British influence in my upbringing, but I had a hankering for a pair of fried eggs on GF toast with a big side of baked beans last night. I don’t know if it was the egg theme or not that got me thinking about it, but boy did it hit the spot!!
