Cheryl at Gluten Free Goodness is hosting the Gluten-Free Menu Swap this week with my favorite theme: Quick and Easy! I do like preparing good, healthy food for my family, but I don’t often have a lot of time for a complicated meal. And since my five- and seven-year-olds are still in the stage of preferring to eat plain foods, simple works best for them. I do have to take a break from the plain food now and again to please the palates of myself and my husband, but even then I often find short cuts to make them quick and easy. I may prepare ingredients in advance of meal time, use a Slow Cooker, or choose quick-cooking foods. But probably my favorite short cut is using up the leftovers.

Oh, those potato farls look good. I’ve been making Amy’s socca pizza crusts in my cast iron skillet, but may have to try those soon.

Shirley – They are a great way to use up some leftover mashed potatoes, that is, if you ever have any leftovers.

Heather-We’ve had the socca crusts four times. I’d say that is very good luck. We love them. I’ve used them for pizza night twice and as flatbread with a little pesto and a sprinkle of cheese to go with a soup dinner.
