It is officially spring! Spring always seems to bring a surge of activities at our house. And this year is no different. I really wanted to post about the meals and treats we made to celebrate St. Patrick’s Day this year, but just couldn’t find the time to do it. So, instead I offer this picture of the Rainbow Fruit Kabobs I made for my daughter’s class. I think the picture says it all!
With spring activities keeping it busy, I’m trying to keep our meal prep simple, but I feel like I’ve been in a bit of a food rut. So, I’ve been happy to have Amy Green’s new cookbook: Simply Sugar and Gluten-Free to motivate me. I know I’ve mentioned it a couple times already, but I am really enjoying the recipes. I find most of them to be pretty quick and easy to prepare. And best of all, they seem to work for everyone in the family (even the picky kids). I think I’ll try a few more recipes this week, too!
Also on the menu this week is noodles. Wendy at Celiacs in the House is hosting the Gluten Free Menu Swap this week with noodles as the theme. We don’t eat a lot of noodles, or pasta in general, in my house. My kids have never learned to like pasta. My husband and I still enjoy the Gluten-Free variety on occasion, so I do encourage the kids to try it when I fix it for us. They still insist they don’t like it, so I don’t fix it too often. Celiac Family’s Menu This Week:
Thursday - I plan to try Amy’s recipe for Roasted Chicken. I’ll serve it with corn and green beans.
Friday - I hope Amy’s recipe for Spicy Stuffed Southwest Chicken is as good as it sounds. I’ll serve it with leftover rice and beans from Tuesday.
Saturday – One more from Amy’s cookbook this week: Socca Pizzas. Wendy at Celiacs in the House says her family loves them, so I’m anxious to give them a try.
