Even though last week’s weather almost felt more like summer, it is officially spring! I’ve chosen a spring vegetable for the theme for this week’s Gluten-Free Menu Swap – Artichokes. Artichokes can be a nice way to slow down your meal. You know…steam it fresh, peel and eat each leaf one at a time. It’s kind of fun. Of course, most of us don’t have time to do that with our busy schedules. We’re rushing around and grabbing the can of artichoke hearts or maybe the jar of marinated artichoke hearts. And that’s good for me, too. I love to add the hearts to a salad or casserole.
According to Ocean Mist Farms, artichokes are a good source of Potassium, Magnesium, Vitamin C, Fiber, and Antioxidants. Celiac Family’s Menu This Week:
Monday - Rotisserie Chicken served with Wild Rice Salad (with Artichoke Hearts)
Wednesday - This busy night is going to be an easy soup and sandwich night.
Thursday – Grilled Steaks served with baked potatoes and steamed broccoli
Friday - Pizza using Bob’s Red Mill Mix, served with a Spinach Salad
Saturday - Leftover Buffet
Sunday – Gluten-Free Pasta Salad with Chicken and Artichoke Hearts served with garlic bread (gluten-free, of course)
Gluten Free Menu Swap Roundup
With the warm weather sending all the neighborhood kids outside to play, Paige at Not Missing a Thing! has had to figure out how to get a few extra servings from her meals for the visiting neighborhood kids. It sounds like summer already at her house. Well, I don’t know if she’s planning for it this week, but her meals of Meatloaf and Taco Soup with Cornbread seem like good choices for stretching the meals to add an extra guest. She’s also celebrating her daughter’s birthday with a Seafood Sampler on her menu this week.
Samantha at So Simply Good is trying some recipes from the new cookbook Eat Like a Dinosaur. I’ve been really intrigued by the book, and was hoping to take the kids to the book signing this weekend, but just couldn’t fit it into our schedule. On Samantha’s menu this week is Chicken Nuggets with Zucchini Latkes, 50/50 Burgers, Shakey Pork BBQ with Apple Bacon Slaw, Rat on a Stick, and so much more!
Wendy at Celiacs in the House is not a fan of artichokes, so you won’t find any in her menu this week. Like Samantha, Wendy is also cooking from Eat Like a Dinosaur this week. Her family really enjoys the Bacon, Kale and Black Olive Egg Pie. Also on Wendy’s menu this week, is Salmon Cakes, Soup or Chili with Slaw, and Soft Tacos.
Renee at Beyond Rice and Tofu is continuing with the Cookbook Inspiration theme from last week. She shares her list of favorites as well as a couple new ones that she’s using for this week’s menu. She’s making Roasted Tofu with Braised Brussels Sprouts, Chana Dal with Indian Spiced Roasted Cauliflower, Tofu Curry, and Mujadara with Kale Salad.
Rachel at Rachel Cooks has lots of hearty, family favorite meals on her menu this week. Rachel loves casseroles, and is making two chicken casseroles this week: Chicken Cordon Bleu and Buffalo Chicken. Then, it’s Nachos, Pizza and Wings for the kids. And for her husband, it’s Chili, Brats and Mashed Potatoes.
