Happy Monday, everyone! Happy menu planning. Happy, happy, happy! Is that enough “happy’s” to wake you up? I’m thinking positive, but this cold, cloudy morning with snow flurries doesn’t exactly inspire me. Time for some warm comfort food! The theme for the Gluten-Free Menu Swap this week is potatoes. Mashed potatoes is probably my favorite comfort food, but I don’t eat it much anymore. My husband is the one who makes mashed potatoes in our family. He makes them with roasted garlic, butter and sour cream. They are delicious and always requested at big family gatherings. But, with my intolerance to dairy, it isn’t really comforting anymore. Wendy’s post last month about twice baked potatoes, got my taste buds yearning for potatoes again. So, I’m going to make some twice baked potatoes without the dairy this week. Hopefully, that will satisfy my craving for potatoes. If not, I may have to make baked potato soup for lunches this week.

Gluten Free Menu Swap Roundup
I’m sending happy thoughts to Paige at Not Missing a Thing!, who seems to be feeling a bit drab this week, too. She’s trying to change things up a bit this week by revising a Chicken recipe with Broccoli and Cashews and trying a new recipe for Pioneer Woman’s Ranch Style Chicken. Also on her menu this week is Salad Dressing Chicken, Spaghetti and Meatballs, and Hamburgers on the grill (hopefully!).
Rachel at Rachel Cooks has a week full of family-friendly meals: Pizza and wings, Lisa’s Parmesan Fried Chicken, Tacos, Brats, and more. And, I certainly didn’t miss the mashed potatoes and gravy that she’s serving with pork chops this week. Yum!
Cheryl at Gluten Free Goodness is joining the menu swap this week with Beef Stew, Simply Yum Quinoa, and Baby Greens with herbs and Salmon on her menu. She also posted a link to newsletter she wrote about Gluten-Free Passover Foods, a great way to find gluten-free foods this time of year. And her Macadamia Maple Butter looks so decadent, you won’t believe how simple it is to make.
