Menu Plan March 7 – Celery

Posted By Heather On March 7, 2011 @ 10:10 am In Menu Plan | 9 Comments

[3]The Gluten Free Menu Swap Roundup is here this week, and the theme is celery. It’s one of those vegetables that I always have in the refrigerator. My son has started to really enjoy eating it raw with his lunch and for snacks. But what about meals? Celery is not often the star ingredient in a meal, but it is a common ingredient in so many meals. We always add it in to tossed green salads and stir-fries. It adds wonderful flavor and texture to dishes. Can you imagine soups and stocks without celery? Just wouldn’t be the same, in my opinion.

This week, you’ll find celery in my Red Beans and Rice [4], tossed green salad, and Gumbo [5]. If the weather warms up a bit, I may even make some Potato Salad [6]. Check below for the roundup of what other gluten-free bloggers are planning to eat this week.

Celiac Family’s Menu This Week:

Monday - Red Beans and Rice, GF French Bread

Taco Tuesday with Shredded Southwest Chicken

Wednesday - Flank Steak, Potato Wedges, Green Salad

Thursday - Gumbo served with Rice or leftover GF Bread

Friday - Shredded Chicken Pizza with Avocado

Saturday - Baked Salmon with Dill, Rice, Asparagus

Sunday – I think I may have to try a couple recipes from Amy’s [11] new cookbook: Simply Sugar and Gluten-Free [12]. There are so many tempting recipes to choose from, but I think I’ll start with a couple recipes that my kids will have no trouble trying: Roasted Chicken and Green Beans with [Sweet] Red Peppers.

Cheryl at Gluten Free Goodness [13] likes to grow celery in her garden, with much success based on the picture she shares. And she likes her celery stewed! Now that’s one I don’t think I’ve tried. She also has other stews on her menu this week [14]: Nightshade Stew [15] and Sniffle Stew [16]. She plans to try some recipes from a couple new cookbooks she got.

Wendy at Celiacs in the House [17] says celery is in her menu plan every week. And this week’s menu [17] is no exception. It will be in her Pesto Minestrone and Chicken Fried Rice. She also shares a link to her Celery Root Soup [18]. Looks like Wendy will be trying recipes from Amy’s new cookbook [12], too. I think I see a trend here. :)

Soups and stews also seem to be a popular choice this week. Esther at The Lilac Kitchen [19] has Leek and Potato Soup and Beef Stew on her menu this week [19]. She also has spare ribs, pasta and birthday cake on her menu. Yum! And, she’s reminded us that Tuesday is Pancake Day! (You may know it as Shrove Tuesday, Mardi Gras, or Fat Tuesday.)

Nicola at G-Free Mom [20] is starting the week with her Homemade Hummus [21] served with celery sticks and chickpea flour bread. And, to continue the soup/stew trend, she has Tuscan Bean Soup and Goulash on her menu this week [20], too. Risotto and Pizza rounds out her week of delicious meals.
