The Gluten Free Menu Swap Roundup is here this week, and rice is the theme. Rice is one of those foods that a lot of celiacs choose for a filling, gluten-free meal. It helps fill the void from the lack of bread, pasta, and gluten in meals. When my kids were toddlers, I would form the rice into balls or little scoops of rice so that they could pick it up with their fingers and eat it. They gobbled them up. Somewhere along the way, my son decided he didn’t like rice anymore. He still won’t eat it. And, since some celiacs have trouble eating rice, I don’t force it on him. The rest of us in the family still eat rice on a regular basis, and sometimes he gives it another try.
Often, our rice of choice is a white, medium-grain rice that’s a little sticky. It’s quick to fix, and I know my daughter will eat it. But, I also like to fix Jasmine, Basmati, Brown and wild rice, too. It’s nice to mix it up a little. Amy has a great, simple recipe for Oven-Baked Brown Rice that turns out perfect every time. In her new book, Simply Sugar and Gluten-Free, she also suggests freezing it in two-cup portions. It certainly saves time on those nights when I need a quick meal. And, it’s nice to feel that we’re making a healthier choice by using the brown over the white rice.

Carrie at Ginger Lemon Girl has some great meal ideas this week for dinners, as well as breakfast and lunch, too. Try Creole Black-Eyed Peas and Chicken Hot Pot, Beer Battered Fish, Baked Spaghetti, and Whole Grain Rosemary Garlic Pizza Crust just to name a few. This week at Angela’s Kitchen, Angela offers several recipes for rice: Pork Fried Rice, Asian Bean and Rice Rolls, Black Beans and Brown Rice, Gourmet Rice Dressing, and Seasoned Yellow Rice. And those aren’t even on her menu this week. On her menu, she has even more tempting dishes: BBQ Ribs, Santa Fe Quinoa Salad, Stuffed Peppers, Chicken Enchiladas and more.
