Menu Plan May 16 – Rice

The Gluten Free Menu Swap Roundup is here this week, and rice is the theme. Rice is one of those foods that a lot of celiacs choose for a filling, gluten-free meal. It helps fill the void from the lack of bread, pasta, and gluten in meals. When my kids were toddlers, I would form the rice into balls or little scoops of rice so that they could pick it up with their fingers and eat it. They gobbled them up. Somewhere along the way, my son decided he didn’t like rice anymore. He still won’t eat it. And, since some celiacs have trouble eating rice, I don’t force it on him. The rest of us in the family still eat rice on a regular basis, and sometimes he gives it another try.

Often, our rice of choice is a white, medium-grain rice that’s a little sticky. It’s quick to fix, and I know my daughter will eat it. But, I also like to fix Jasmine, Basmati, Brown and wild rice, too. It’s nice to mix it up a little. Amy has a great, simple recipe for Oven-Baked Brown Rice that turns out perfect every time. In her new book, Simply Sugar and Gluten-Free, she also suggests freezing it in two-cup portions. It certainly saves time on those nights when I need a quick meal. And, it’s nice to feel that we’re making a healthier choice by using the brown over the white rice.

Saturday - Hopefully, we’ll be going out for my birthday. Not sure where. Or maybe my husband will make some yummy BBQ ribs for me. :) And, a chocolate dessert will have to be on the menu, too!

Gluten Free Menu Swap Roundup

Cheryl at Gluten Free Goodness is busy preparing to move into a new house next month. And it sounds like she’s making lots of great meals while clearing out the freezer: Rosemary Beef Stew, Kalamata Hummus, Halibut with Kale Pesto, and more.

Wendy at Celiacs In the House says they prefer jasmine, brown, and fried rice at their house. And this week they are eating it with Asian Shredded Beef and stir-fried vegetables. She also has Buffalo Chicken Burgers, Inside Out Lettuce Turkey Wraps, Steamed Fish, and more tempting dishes on her menu this week.

Carrie at Ginger Lemon Girl has some great meal ideas this week for dinners, as well as breakfast and lunch, too. Try Creole Black-Eyed Peas and Chicken Hot Pot, Beer Battered FishBaked Spaghetti, and Whole Grain Rosemary Garlic Pizza Crust just to name a few. You should also check out her post on Brown Rice Bowls that she posted last summer as the first in her series of Quick and Easy Gluten-Free Meals.

This week at Angela’s Kitchen, Angela offers several recipes for rice: Pork Fried Rice, Asian Bean and Rice Rolls, Black Beans and Brown Rice, Gourmet Rice Dressing, and Seasoned Yellow Rice. And those aren’t even on her menu this week. On her menu, she has even more tempting dishes: BBQ Ribs, Santa Fe Quinoa Salad, Stuffed Peppers, Chicken Enchiladas and more.

[...] Heather of Celiac Family is the host of the Gluten Free Menu Swap this week.  She has chosen rice as the theme ingredient.  I actually don’t have rice on my menu this week.  Weird!  However, rice would be great in the stuffed peppers and I love to have it on hand already cooked in the freezer for nights I am pressed for time.  I like making “green rice” (packed with minced fresh cilantro) in the summer and make nori rolls with veggies for a snack.  My favorite way to eat rice has to be Pork Fried Rice.
