I’m hosting The Gluten Free Menu Swap again. This week the theme is corn. Our local corn is not ripe enough to eat yet. However, we have been getting US-grown fresh corn-on-the-cob in our grocery stores. And, they are really sweet and juicy!
When it’s that good, I just throw the shucked corn in a pot of boiling water for about 5 minutes. (I like it nice and crisp, and bursting with juice and flavor.) For salads and other corn dishes, I will often use frozen corn kernels.
And don’t forget about corn flour and corn meal to make corn bread and corn dogs. I have a bag of Masa in the pantry that I need to get out and use. So, I’ll be making pupusas this week.
