I’m hosting The Gluten Free Menu Swap again. This week the theme is corn. Our local corn is not ripe enough to eat yet. However, we have been getting US-grown fresh corn-on-the-cob in our grocery stores. And, they are really sweet and juicy!
When it’s that good, I just throw the shucked corn in a pot of boiling water for about 5 minutes. (I like it nice and crisp, and bursting with juice and flavor.) For salads and other corn dishes, I will often use frozen corn kernels.
And don’t forget about corn flour and corn meal to make corn bread and corn dogs. I have a bag of Masa in the pantry that I need to get out and use. So, I’ll be making pupusas this week. The pictures of Edamame, Corn, and Tofu Succotash and Fresh Corn Polenta with Sauteed Cherry Tomatoes will really get your mouth watering.
