Menu Plan May 23 – Corn

I’m hosting The Gluten Free Menu Swap again. This week the theme is corn. Our local corn is not ripe enough to eat yet. However, we have been getting US-grown fresh corn-on-the-cob in our grocery stores. And, they are really sweet and juicy!

When it’s that good, I just throw the shucked corn in a pot of boiling water for about 5 minutes. (I like it nice and crisp, and bursting with juice and flavor.) For salads and other corn dishes, I will often use frozen corn kernels.

And don’t forget about corn flour and corn meal to make corn bread and corn dogs. I have a bag of Masa in the pantry that I need to get out and use. So, I’ll be making pupusas this week. It’s been so long since I’ve made them, I hope I remember what to do. What are you making with corn this week? Be sure to check below for a roundup of gluten-free menus from other bloggers.

Gluten Free Menu Swap Roundup

Carrie at Ginger Lemon Girl spent her weekend gardening, so she didn’t get to do any meal prep work for the week. This week she plans to put her slow cooker to use, and has some great ideas for quick and tasty meals: Crockpot Posole, Crockpot Black Bean Soup, and Baked Oatmeal.

The pictures of Edamame, Corn, and Tofu Succotash and Fresh Corn Polenta with Sauteed Cherry Tomatoes will really get your mouth watering. Also on the menu this week is Socca Pizza, Fresh Corn Johnnycakes, Chickpea Picatta, and more. Did I mention the Vegan Chocolate Cupcake Brownies? Yum.

Cheryl at Gluten Free Goodness is joining us this week, too, even though she’s in the midst of moving and she’s allergic to corn. Well who needs corn when you’ve got Chocolate Raspberry Love Pie on the menu? :) She also has Alta’s Quinoa Pizza with Garlic Scape Pesto, Mahi, Roasted Chicken and Hummus on this week’s menu.

Good morning Heather! Here’s my menu for the week: http://gingerlemongirl.blogspot.com/2011/05/this-weeks-menu-crockpot-posole.html Our local corn isn’t quite ready yet either! I can’t wait until it is though because it’s about the only time of year we eat corn at all! :-) I really need to make pigs in a blanket soon, my husband LOVES those!!

Thanks so much for hosting this week, Heather! I love the theme. I am so excited to start cooking with fresh corn!

Your mouth-watering pupusa pictures were the original inspiration that has led me into all kinds of cooking with masa. A not-entirely-authentic version of arepas is now one of my go-to recipes. Eating GF means always looking for ways to get a nice full warm feeling from food, and masa does that so well!
