[2]I hope everyone is enjoying the holiday weekend. We’ve had a nice warm weekend to soak up the sunshine and Vitamin D. The Gluten-Free Menu Swap is being hosted by Angela at Angela’s Kitchen [3] this week. The theme is Memorial Day. What are you eating for the holiday? We are grilling meats and enjoying snack foods with fresh fruit and veggies.
- Caramel Corn Puffs [4]
- Chocolate Chip Banana Muffins [5]
- Beef Kabobs [6]
- Potato Salad for a Crowd [7]
- Cold Wild Rice Salad [8]
- Fruit Pizza Dessert [9] with blueberries and strawberries for a Red, White and Blue effect

Monday - Grilled Burgers and Chicken Breasts served with chips and Avocado Salsa [10]
Tuesday - Baked Teriyaki Chicken Tenders served with Rice and Broccoli
Wednesday - Pizza made with Bob’s Red Mill Gluten Free Pizza Crust Mix [13]
Thursday – Waffles served with bacon and Tropical Black Bean Salad [12]
Friday - Salmon with a Balsamic Glaze [11] served with quinoa and asparagus
Saturday - Eating Out [14]
Sunday – Leftovers
