I hope everyone had a nice Memorial Day weekend. We sure got some hot weather, which means more cold salads on my menus this week. And that seems to work just fine with Wendy’s theme for the Gluten Free Menu Swap this week [2] - In-Season Produce. Make sure you check out Celiacs in the House this week for the roundup [2] of all the gluten-free menus.
Celiac Family’s Menu This Week:
[3]Monday - More Pupusas and Spicy Slaw. Yum!
[4]Tuesday - Wild Rice Salad and grilled chicken
[5]Wednesday - Berry Fruit Salad, salmon, kale
[6]Thursday - Seven Layer Salad with spinach & kale
[7]Friday - Beef Kabobs with baby potatoes, sweet peppers

Saturday – Out with family to help celebrate my brother-in-law’s retirement!
