Sorry for my delay with the menu plan this week. I’ve been completely distracted because my son came home from a school field trip on Friday and told me he ate pretzels (and not the GF variety!). It kind of ruined my weekend, and maybe my week, too. Ugh. I’m trying to work through it with my son and the school to make sure it doesn’t happen again, but I’m a little low on sleep and brain power.

I’ll be trying to keep the menus a little more plain than usual to help my son get through the next couple weeks until his gut heals. For more exciting menus, be sure to visit Carrie at Ginger Lemon Girl ^[2]. She’s hosting the Gluten Free Menu Swap this week ^[2] with Garden Peas as the theme. Sounds good to me. But since I don’t really have fresh garden peas, I’ll have to settle for the frozen variety, and what I can find at the stores. Here are a couple favorite recipes with peas:

Celiac Family’s Menu This Week:

Monday – Grilled Chicken and rice served with green beans

Tuesday – Tilapia with Lemon and Basil served over leftover rice

Wednesday – Chicken Kabobs ^[5] with potatoes

Thursday – Pancakes ^[6] with a Berry Fruit Salad ^[7]

Friday – Roasted Chicken with Potato Farls ^[8]

Saturday – Socca Pizza with spinach and a little cheese if we can handle it

Sunday – Leftovers
