Last week was almost a complete failure of following our menu plan. I had a sick kid who didn’t feel like eating much, and a refrigerator full of leftovers. I decided it made more sense to eat up the leftovers than cook meals that would no doubt create more leftovers. So, I’ve moved some of my meals planned last week to this week instead.
I’m excited to see what other bloggers are planning for the Meatballs theme this week. We don’t make meatballs very often, although my daughter loves the ones my husband makes. This week, I’m trying a traditional recipe for Meatballs with Spaghetti and Marinara Sauce from Artisanal Gluten-Free Cooking. I checked out the cookbook at the library this week. I wasn’t looking for cookbooks, just happened to see it. Funny how my eyes can pick out “Gluten-Free” on a book set on a shelf of new books from 8 feet away. It looks like it has a lot of good, basic gluten-free recipes to use on a weekly basis.

Monday – Easy Garlic Shrimp Pasta with Broccoli
Tuesday – Pork Chops with Black Beans and Salsa served with Green Beans and Cornbread
Thursday – Chicken Slow-Cooked with Mushroom Soup
Friday – Spaghetti and Meatballs served with Spinach Salad
Saturday – Eating Out (Kid’s Choice again, since we didn’t get to go out last week.)
Sunday – Leftover Buffet
