Menu Plan November 2

mpm121jpgLast week was so busy for us. My daughter was sick, I was sick, and with all the Halloween activities, I am far behind. This week looks no less busy! So, I’m going to try to keep my menu quick and easy.

Monday – Parmesan Tilapia
This white fish recipe is very quick and easy. The fish is topped with a parmesan sauce, which also tastes great on vegetables. Serving with rice and broccoli.

Tuesday – Pupusas
Making pupusas again, this time filled with refried beans and cheese. I’m amazed how quick it is to make these. I think I’ll get the kids involved this time, too. Serving with Avocado Salsa and Cilantro Rice. If you’d like to make pupusas but need more information, check out Diane’s post at The Whole Gang. She even has a recipe for the spicy slaw that is often served with pupusas.

Wednesday – Grilled Steaks
Quickly grilling steaks and serving with corn and sweet potatoes.

Thursday – Taquitos
Mexican chicken rolled in corn tortillas. Serving with leftover Avocado Salsa and Cilantro Rice.

Friday – Sausages and Hot Dogs
What’s faster than heating up spicy sausages for the adults and hot dogs for the kids? Serving with baked beans and potatoes (or maybe french fries for the kids).

Saturday – Party
Not sure how many people will be here or what the menu will be, yet. Busy week ahead.

Sunday – Leftovers
I expect we will have lots of food leftover from the party. So, we’ll make a buffet of it for dinner.

  • Esther at The Lilac Kitchen is hosting the Gluten-Free Menu Swap this week with the theme ingredient of dried fruit. Raisins are the only dried fruit I buy on a regular basis. The little boxes make a quick and easy snack for the kids to take to school. And, lately, I’ve been adding raisins to baked apples, too. Though I don’t buy them often, I sometimes buy dried cranberries, blueberries and apricots. I often just eat them as they are for a snack or throw them into salads. I also use dried currants in scones and muffins, though it’s been a while since I’ve made those. I’m more likely to put the currants in a rice dish with pine nuts.

Avocado salsa sounds yummy, going to have to check out what else is in it. Just bout avocados at Costco and the only bummer is they all ripen at the same time!
