Menu Plan November 7 – Slow-Cooker Meals

[2]This week’s Gluten-Free Menu Swap is being hosted at Angela’s Kitchen [2]. So, click over to her site to browse all the slow-cooker meals and gluten-free menus compiled this week.
I’m starting my week with slow-cooked Shredded Mexican Chicken [3]. After almost three years and 275 posts, that recipe continues to be one of the most popular posts on Celiac Family. It must be the simple ingredients, the quick prep time, and versatile, flavorful chicken that attract so much interest.
I also have a couple more slow-cooked meals on our menu this week. I loved Angela’s Sweet & Sour Chicken [4] recipe I tried a couple weeks ago, so I’m making it again this week. I’m also going to try cooking chicken with a can of Progresso Creamy Mushroom Soup [5] in the slow-cooker. I noticed the words “Gluten Free” on the front label of the soup can last week while shopping. I don’t know why I get so excited by that. But, I do appreciate that “Gluten Free” is getting more attention, so I bought a can. It might be useful for Thanksgiving dishes, too. Here’s the rest of my week:

Monday - Chicken Tacos [3] with Guacamole [8]
Tuesday – Parmesan Tilapia [6] with Rice and Green Beans
Wednesday – Chicken Breasts slow-cooked with Creamy Mushroom Soup [5]
Thursday – Leftover Buffet
Friday – Eating Out [9] (Kid’s Choice)
Saturday - Slow-Cooker Sweet & Sour Chicken [4] served over Rice
Sunday - Cilantro Lime Shrimp [7] served over Rice Noodles
