What a great holiday weekend with great fall weather! For us, it was a good time spent with good friends, both new and old. But a lot of miles and meals on the road, and I am happy to be home. Meals this week will be simple and easy while I try to get back to our regular schedule. I’m starting my day by baking bread, doing laundry, and getting myself organized by starting with a meal plan.
Cheryl at Gluten Free Goodness is hosting this week’s Gluten Free Menu Swap with another great theme ingredient to prepare for the upcoming holiday season: cranberries. I don’t have any cranberries in my menu this week, so I’ll have to point you to Cheryl’s roundup and a roundup I did last year for more ideas on cranberries.

Monday - We made it home in time for dinner, but we kept it simple by eating Eggs and Bacon with toast and steamed broccoli.
Tuesday - Getting Pulled Pork out of the freezer and serving with Sweet Potato Fries and Spinach Salad
Wednesday - Roasted Chicken served with corn and sauteed green beans
Thursday - Red Beans and Rice served with toasted Garlic Bread
Friday - Easy Garlic Shrimp served over rice noodles with steamed broccoli
Saturday – Pizza using Bob’s Red Mill Pizza Crust Mix, served with leftover spinach salad
Sunday – Leftover Buffet
