Earthquake and aftershocks, hurricane storms, power outages…Wow, Mother Nature sure made an exciting end to our Summer break this year. The kids are going back to school tomorrow. I’ve been busy writing letters to the teachers and making gluten-free play dough to start the year off right. I’ll have to post the updates I made to both the letters and play dough recipe this week.
Angela is hosting the Gluten Free Menu Swap this week at Angela’s Kitchen, with eggplant as the theme. I’m not a big fan of eggplant. I don’t dislike it, I just don’t usually buy it. I used to make an eggplant lasagna, but I haven’t made it for years. I can’t wait to see what delicious dishes Angela is making with eggplant.
On Celiac Family’s Menu This Week:
Monday – For labor day, we’re grilling Steaks and serving with Sweet Potato Fries and Simple Parmesan Asparagus.
Tuesday – California Chicken with Corn and Black Bean Salad
Wednesday - Homemade Pizza served with a Spinach Salad.
Thursday – Gluten-Free Egg Rolls and Fried Rice
Friday - Hamburgers, French Fries and Watermelon
Saturday – Quiche – not sure exactly what I’m putting in it yet.
Sunday – leftovers
