For this month’s Gluten-Free Menu Swap, I’m trying some new recipes from some great gluten-free friendly cookbooks.
Last week, I didn’t shop very well for the recipes I tried. Even though I had to substitute ingredients for all three recipes, they still turned out very tasty.
I really liked the Rogan Josh with Sweet Potato Fries from Wel Fed Weeknights. Our grocery store was out of the ground lamb needed for the recipe, so I made the Rogan Josh with Beef Bites instead. I liked the flavor, and the beef was nice, but I’d like to try it again with lamb. The sweet potatoes were nice and tender, but I think I’d like them a little crispier, perhaps by roasting in the oven.
The Sticky Barbecue Wings from Gluten-Free Small Bites turned out really well. It’s hard for me to recommend the BBQ sauce recipe because, again, I had to substitute some ingredients. I’m not sure I got the taste intended, but the chicken wings cooked perfectly.
The Grain Free Apple Cinnamon Muffins from The Wellness Mama Cookbook were also good. I was a little low on coconut flour, so I had to substitute a couple tablespoons of sorghum flour. That’s probably why I had to cook the muffins an extra 5 minutes to complete baking. The muffins had a nice soft texture and strong cinnamon flavor. I also added a couple tablespoons of agave syrup for a little sweetness, but I still felt like they needed a little more sweetness, so I drizzled some maple syrup on them before eating.
