For this month’s Gluten-Free Menu Swap, I’m trying some new recipes from some great gluten-free friendly cookbooks.
Last week, I tried three new recipes and had good results with all of them. My favorite of the three was Smoky Candied Bacon Sweet Potatoes from Against All Grain Celebrations Cookbook. It had a lot of yummy flavors that worked great together.
The Spinach Artichoke Dip from Minimalist Baker’s Everyday Cooking was also very good. It makes a great dip with corn chips, but I served it as a sauce on top of cooked chicken. It would also make a great casserole with cubed, cooked chicken mixed in.
The Taco Breakfast Bake from Quick and Easy Ketogenic Cooking was a tasty recipe, though my skillet was a little too big for the recipe, so it baked up a little shallow. This would be great for a brunch or potluck. I would double the recipe and bake in a 9×13 or equivalent baking dish. I might even add some green chiles or jalapeños to pump up the flavor a little.
