October Menu Plan – Fish Theme

[2]It’s the first of October. For the Gluten-Free Menu Swap this week, I’m including my meal plan for the month. It’s a general plan for what we’ll be eating this month. It will change a little during the month, but it gives me a good place to start each week. It also helps me meet some goals of having a balanced diet, trying some new recipes, and keeping the menu from looking the same week after week.

In addition to the monthly plan, I also have a more detailed weekly menu. The theme for this week’s Gluten-Free Menu Swap is fish. Another one of my goals is to keep fish on our menu every week. My kids are not big on fish (and truth be told, neither am I). But that doesn’t mean we don’t enjoy eating fish. It just isn’t one of our favorite menu items. At least until now. I have to keep reminding myself that my kids still like their foods fairly bland. Nothing too spicy. So, when I tried fixing fish tacos for them a couple months ago, I didn’t add a lot of spices to theirs. I chose a mild fish, tilapia, and seasoned the fish simply with salt and cooked it on a Cast-Iron Grill [3] on the stove. I let them put it into taco shells and corn tortillas with a little spinach and sliced black olives. They loved it, decided it was their new favorite, and told me we should have it on the menu every week! Well, it didn’t make it onto our menu every week, but twice a month seemed reasonable. My husband and I like our fish tacos seasoned with a little cumin and chipotle pepper. We also like to add a salsa, like pico de gallo, avocado salsa, or pineapple-mango salsa, to our tacos.

Gluten Free Menu Swap Roundup

Paige at Not Missing a Thing! [27] isn’t making fish this week. Instead, she’s preparing casseroles and other dishes for cooler weather. This week she’s planning for Tacos, Sausage and Peppers, Mrs. Jolly’s Chicken Casserole [28], Oven Baked Drumsticks with Roasted Potatoes, Ham Steak and Fried Potatoes, and more [27].

Carrie at Ginger Lemon Girl [29] is sharing tips for cooking fish this week, as well as an easy and tasty fish recipe. In addition to Baked Whiting Fish this week, she’s fixing breakfast for dinner, Turkey Barbecue [30], Pan-Grilled Steaks, and Slow-Cooker Roast Chicken.

Lisa at Extraordinary Life [31] isn’t big on cooking fish, but she did find a great-loking recipe for Almond Crusted Fish Sticks. Her family continues on the Paleo diet this week [31] with Beef Stroganoff, Pork and Vegetable Lo Mein, Pulled Pork, and Lettuce Leaf Tacos.

Kimberlee at The Peaceful Mom [32] is sharing breakfast, lunch, and dinner plans this week. No fish, but still great gluten-free meals: Chicken Pasta Salad [33], Chicken and Black Bean Chili [34], Chuck Roast, Taco Bowls, and Chicken and Veggie Stir Fry.
