Peas – Menu Plan April 22

PeasIs it starting to feel like spring at your house? We’ve had some nice sunny spring days, but are still getting the occasional snow showers, too. Never mind the snow! The longer days of sunshine already have me thinking of fresh garden vegetables and salads. This week I’m making two salads with peas: Seven-Layer Salad and Wild Rice Salad. Fresh peas from the garden or farmer’s market would be nice, but this week I’ll be getting these peas out of the freezer.

Monday —  Sandwiches or Hot Dogs, Seven-Layer Salad with Creamy Dill Dressing (I’ll make it with Coconut Yogurt to keep it dairy-free.)

Tuesday — Pulled Pork, Sweet Potato Fries, Steamed Green Beans

Wednesday — Bacon-wrapped Chicken TendersWild Rice Salad with Parmesan Dressing (I’ll make it with a Vegan parmesan substitute.)

Thursday — Eating Out at Chick-fil-a

Friday — Hamburgers, Roasted Potatoes, Steamed Broccoli

Saturday — Celebrating my daughter’s birthday at P.F. Chang’s

Sunday — leftovers

Angela is sharing her gardening tips for sugar snap peas this week. I love how she plans for the kids to grab them and eat them while they’re playing in the yard. Angela also found a recipe for pea pancakes! Use Angela’s gluten-free recipe for pancakes and add pureed peas so that those picky eaters in your house get a serving of vegetables without even knowing it. Also on her menu this week is Slow-Cooker Cassoulet, Gingered Beef and Broccoli Salad Bowl, Tuna Noodle Casserole, Steak and Potato Salad, and Restaurant Style Lo Mein with Shrimp. The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth says that peas are a staple side dish at her house. She also likes to add frozen peas to casseroles. For this week’s meals, she’ll be making Irresistible Grilled Shrimp with Fruit Salsa, Tomato Avocado Salad, Hippie Loaf, Chef Salad, and Pizza. The Peaceful Mom: Simple Gluten-Free Menu
I don’t see any peas in Kimberlee’s meals this week. Instead, her family will be eating BBQ Pepper Jack Bacon Burgers, Cheeseburger Casserole, Taco Bowls, Pancakes and Sausage, Grilled Cheese, Hot Dogs, and Pasta. Kimberlee also shares great ideas and recipes for breakfast and lunch every week.

Awkward Girl Gets Fit: Gluten-Free, Grain-Free, Sugar-Free Menu
Samantha says that peas are often served as a side dish at her house, but not in her meals this week. This week, she is getting inspiration and a shopping list for her meals from eMeals. Grilled Chicken Quarters, Shredded Beef Taco Roast, Tarragon Chicken Salad, Herbed Grilled Beef Tenderloin, and Teriyaki Chicken are all on her menu this week.
