Slow-Cooker Meals – Menu Plan October 28

slowcook28We’re talking about Slow-Cooker meals this week for the Gluten-Free Menu Swap.

I seem to use my slow-cooker more in the fall and winter. I love the thought of coming home to a meal all cooked and ready to warm me up on a chilly evening. And, it’s perfect for a night of trick-or-treating, don’t you think?

I do use my slow-cooker year round to make shredded Mexican Chicken and Pulled Pork. But, I’m more likely to make Chilis and Stews in my slow-cooker during the colder months of the year. I don’t use my slow-cooker as often as I could…or maybe should. I don’t use it for breakfast or desserts, but I’m willing to give it a try. So, maybe I’ll make Angela’s French Toast Casserole this week and Chocolate Flan from The 163 Best Paleo Slow Cooker Recipes. Oh, and I’m going to try Gina’s recipe for cooking Gluten-Free Garlic Bread in the slow-cooker, using Pillsbury’s® new gluten-free pizza dough.

Tuesday – Chicken Enchiladas made with my Slow-Cooked Mexican Chicken and Rice

Wednesday – Tilapia Parmesan, Sautéed Spinach,  GF Garlic Bread made in the Slow-Cooker (made with Pillsbury® pizza dough)

Thursday – Chili, Hot Dogs, and Cornbread

Friday – Pizza and Spinach Salad

Saturday – Indian Chicken with rice, steamed green beans

Sunday – leftovers

Gluten Free Detroit Metro: Gluten-Free Menu
Amanda says slow-cooker meals make her feel like a supermom — having dinner ready when everyone walks in the door from school and work. She is getting plenty of inspiration from Stephanie O’dea’s recipes this week: Chili and slow-cooker Corn Bread, Cream Cheese Chicken, and Slow-Cooker Mac ‘n Cheese. She also plans to make French Dip Sandwiches, Potato Leek Soup, and Angela’s Pork Roast with Apples and Pears.

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth says she always uses her slow-cooker to make two things: Chili and Apple Butter. So, in addition to the Chili this week, she’s also planning Stir-Fry with Shrimp, Tacos with Mushrooms, Baked Potatoes, Fish, and Pizza.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee is using her slow-cooker this week for Southwest Chicken Chili and a more traditional Beef and Bean Chili. She’s also making Quesadillas, Pizza with a Chebe Crust, Sloppy Joe’s, and Poor Man’s Meal.

Dietz Eats: Gluten-Free, Dairy-Free Menu
No slow-cooker meals in Fawn’s menu this week. Instead she’ll be enjoying veggies from a local co-op. Her menu this week includes Meatloaf, Oriental Chicken Salad, Pork with Caramelized Onions, Taco Salad, and Chicken and Ham Roll-ups.

Angela’s Kitchen: Gluten-Free, Dairy-Free Menu
Angela definitely puts the slow-cookers to use at her house. Just check out all the recipes she has on her Slow-Cooker Recipes Page. This week, she’ll be making for her family Slow-Cooker Barbecue Chicken, Slow-Cooker French Toast Casserole,  Asian Pork Roast for the Slow-Cooker, Slow-Cooker Pulled Italian Chicken and Kale, and BBQ Turkey Sloppy Joe’s.
