It’s Spinach Week at the Gluten-Free Menu Swap. I may be overdoing it a little, but I’m going to consume spinach every day this week. I have been doing really well lately to avoiding sugar and extra carbs. That is, until the Easter Bunny paid us a visit. I’m hoping the spinach helps me feel a little more energized by the end of the week. I don’t have spinach planned for every dinner this week, but I will be adding it daily to smoothies for breakfast and in salads for lunch.
I’ve heard that because Kale has become the trendy green to eat these days, the market is experiencing a shortage this year. The price of Kale is also expected to rise, so don’t forget about spinach! It is full of good nutrition, too. It is very high in vitamins A, K, and C, as well as folate and manganese. I actually prefer spinach over kale to put in smoothies and salads. The tougher texture of kale, however, makes it a good choice for cooking — sautéing, and adding to soups and casseroles. Whichever one you choose, you’ll be doing your body good by adding it to your menus.

Monday – Pulled Pork Sandwiches, Sweet Potato Fries, Spinach sautéed with bacon
Tuesday – Roasted Chicken, Potato Salad (planning to add leftover spinach to it)
Wednesday – Grilled Steaks, Potatoes and Broccoli
Thursday – Chicken Spaghetti (leftover chicken from Tuesday, Baby Spinach, tomatoes, etc.)
Saturday – leftovers
Sunday – Seven Layer Salad (spinach, carrots, purple cabbage, diced ham, garden peas, creamy dill dressing, and bacon bits)

This week, Kimberlee has Fried Eggs with Spinach on her breakfast menu. For dinners this week, she’ll be eating Ranch Chicken Casserole, Steak Fajitas, Cheeseburgers, Baked Potatoes, Slow-Cooker Chili, Italian Chicken Pasta Salad, and Taco Bowls.
