Spinach — Gluten-Free Menu Plan April 21

Spinach [3]It’s Spinach Week at the Gluten-Free Menu Swap. I may be overdoing it a little, but I’m going to consume spinach every day this week. I have been doing really well lately to avoiding sugar and extra carbs. That is, until the Easter Bunny paid us a visit. ūüėČ I’m hoping the spinach helps me feel a little more energized by the end of the week. I don’t have spinach planned for every dinner this week, but I will be adding it daily to smoothies for breakfast and in salads for lunch.

I’ve heard that because Kale has become the trendy green to eat these days, the market is experiencing a shortage this year. The price of Kale is also expected to rise, so don’t forget about spinach! It is full of good nutrition, too. It is very high in vitamins A, K, and C, as well as folate and manganese. I actually prefer spinach over kale to put in smoothies and salads. The tougher texture of kale, however, makes it a good choice ¬†for cooking — saut√©ing, and adding to soups and casseroles. Whichever one you choose, you’ll be doing your body good by adding it to your menus.
